The cream we use is
extra-thick and rich, the sugar, including piloncillo, has a caramelly flavor that adds dimension to our chocolates. The fewer ingredients in a chocolate, the more important each ingredient is to the end result. Since ganache is only cream, chocolate and essences, each ingredient has to be perfect.
